This is a great alternative to the Elderflower Champagne, given that it's non alcoholic (so the whole family can enjoy it) and it's much simpler and faster to make (no room for error with fermentation etc). You can keep it in the fridge and use diluted in water, sparkling water, or add to cocktails.
Recipe:
~ Accurately identify & forage fresh Elderflowers
~ Remove all toxic stems from the flowers & discard (this is very important as all stems are toxic)
~ Heat 1 litre of water with 500g sugar & stir until dissolved.
~ Remove from the heat & add Elderflowers + 2 finely sliced lemons
~ Cover and leave to sit for 24 hours
~ Next day, strain through a sieve & bottle in sterilised bottles or glass jars.
~ Keep in the fridge & dilute 1 part cordial to 5 parts water
