Stinging Nettle Blissballs Recipe

Nettle & Cacao Truffles / Blissballs / Amazeballs
A match made in heaven really. Think plant based super food: yummy, nutritious, good for you in so many ways, we could talk all day about the health benefits, but really we just want to eat them, so let's cut to the chase...
For my last Foraging Workshop I decided to whizz up my abundant Stinging Nettle leaves & (super nutritious) Nettle seeds with Raw Cacao and make some amazeballs for my guests.
Whilst I don't follow recipes or measure anything, this is roughly how I made them... if you'd like to add some Stinging Nettle superfood into your diet, in a way that your kids and unsuspecting workshop participants will tolerate, then why not give this a go...
My random recipe: you can be pretty loose with this and use what you've got, the aim of the game is to mix everything into a sticky consistency that can be easily rolled into balls.
Here's approximately what I used:
~ 1/8th cup fresh Stinging Nettle leaves & seeds well blended in a high speed food processor - be sure to remove the stems first or you'll get chunky bits
~ 1/2 cup almond meal or whole almonds
~ 1/4 cup shredded coconut
~ 1 cup dates
~ 1/4 cup raw cacao powder (use the best quality you can find)
~ 1 tsp ginger powder (even better freshly grated ginger)
~ 2 Tbsp coconut oil (you could omit)
~ a pinch of salt
~ Put all the ingredients (except coconut oil) into a high speed blender and blend until well combined and sticky. If using coconut oil add at the end once everything else is blitzed.
~ Scoop out spoonfuls and roll between your palms into balls.
~ Store in an airtight container in the fridge.
~ They won't last long though.
